Greek Chicken Flatbreads

Ingredients

  • 1 red onion, sliced
  • 2 Tbsp olive oil, divided
  • 1 (12-oz) jar sliced roasted red peppers, drained
  • 6 herb flatbreads or naan
  • 1½ cups tzatziki dip
  • 3 cups shredded rotisserie chicken
  • 1½ cups crumbled feta cheese
  • ½ cup chopped kalamata olives

Instructions

  1. Preheat broiler. Cook onion in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Add peppers; cook 2 minutes or until thoroughly heated.
  2. Meanwhile, arrange flatbreads on a large baking sheet; brush with 1 Tbsp oil. Broil 2 minutes or until toasted.
  3. Spread tzatziki on flatbreads. Divide chicken, vegetable mixture, cheese, and olives among flatbreads.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 3 Roma tomatoes, chopped
  • ½ cup olive oil vinaigrette (or use Greek dressing)

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
