Bacon-Wrapped Pork Tenderloin

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • 1 Tbsp Montreal steak seasoning
  • 3 slices bacon
  • 1 Tbsp olive oil
  • ½ (8-oz) container guacamole
  • ¼ cup sour cream
  • 1 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with seasoning; wrap bacon around pork. Cook pork in hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until bacon is browned.
  2. Transfer skillet to oven, and bake 10 to 15 minutes or until a meat thermometer inserted into thickest portion reads 145°F.
  3. Stir together guacamole, sour cream, and cilantro; serve with pork.

  • 1 zucchini, thinly sliced
  • ½ (8-oz) pkg frozen whole kernel corn
  • 1 Tbsp olive oil
  • 1 Roma tomato, chopped
  • ½ (15-oz) can black beans, drained and rinsed
  • 1 tsp ground cumin
  • ¼ tsp salt

Side Dish Instructions

  1. Cook zucchini and corn in hot oil in a large skillet, stirring occasionally, until zucchini is just tender.
  2. Stir in tomato, beans, cumin, and salt; cook until thoroughly heated.
