Basil Shrimp Pesto Pasta

Ingredients

  • 1 (16-oz) pkg corkscrew pasta
  • 2 Tbsp butter
  • 2 lb peeled and deveined large raw shrimp
  • 1 (12-oz) pkg broccoli florets, coarsely chopped
  • 1 cup chicken broth
  • 1 (10-oz) jar pesto
  • ¾ cup shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions; set aside.
  2. Melt butter in a large skillet over medium heat; add shrimp. Cook, stirring occasionally, 3 to 4 minutes or until shrimp turn pink. Remove from skillet.
  3. Stir in broccoli and broth; cover and cook 2 minutes or until broccoli is crisp-tender.
  4. Stir in pesto and cook until heated through. Add shrimp, hot cooked pasta, and cheese; toss.
