Lemon-Rosemary Chicken Thighs
Balsamic-Roasted Broccolini

Ingredients
- 2 cloves garlic, minced
- 2 Tbsp lemon juice
- 1 Tbsp chopped fresh rosemary
- 2 Tbsp olive oil
- ¾ lb boneless, skinless chicken thighs
Instructions
- Combine garlic, lemon juice, rosemary, and oil in a small bowl. Pour over chicken in a large zip-top plastic bag; seal and chill 30 minutes.
- Sprinkle chicken with salt and pepper, if desired. Cook in a grill pan or cast-iron skillet over medium-high heat 5 to 7 minutes per side or until chicken is done.

- ½ lb Broccolini (or use broccoli florets)
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 clove garlic, minced
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 450°F. Trim tough ends of Broccolini. Toss together Broccolini, oil, vinegar, garlic, and salt in a large bowl. Spread in a single layer on a rimmed baking sheet.
- Bake 10 to 12 minutes or until browned and tender.
