Crazy-Salt Pork Tenderloin

Baked Rice and Steamed Green Beans

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • ½ Tbsp original mixed-up salt (such as Jane's Krazy Salt)
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F. Rub pork all over with salt. Cook pork in hot oil in a large oven-safe skillet over medium-high heat, 5 minutes per side or until browned.
  2. Transfer skillet to oven, and bake 10 to 15 minutes or until pork registers 145°F. Let stand 10 minutes before slicing.

Side Dish Ingredients

  • 1 cup long-grain white rice
  • 1 (10.5-oz) can beef consommé
  • 1 (10.5-oz) can condensed beef broth
  • ½ cup butter, cut into pieces
  • 1 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Stir together rice and soups in a lightly greased 8-inch baking dish. Dot with butter pieces. Cover tightly with foil, and bake 30 minutes. Uncover, stir, and bake 30 minutes longer or until rice is tender.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
