Barbecue-Bacon Mini Meat Loaves

Ingredients

  • 6 slices bacon, chopped
  • 1 onion, chopped
  • 1½ lb ground beef
  • 1½ cups shredded Cheddar cheese
  • ½ cup panko breadcrumbs
  • 2 large eggs
  • 2 Tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • ¾ cup barbecue sauce
  • 2 green onions, thinly sliced (optional)

Instructions

  1. Preheat oven to 450°F. Cook bacon and onion in a large skillet over medium heat 6 to 8 minutes or until bacon is crisp and onion is tender; cool slightly. Transfer bacon mixture to a large bowl using a slotted spoon.
  2. Add beef, cheese, panko, eggs, Worcestershire sauce, and garlic powder; gently combine. Shape mixture into 6 small loaves; place loaves in a greased baking dish. Top with barbecue sauce.
  3. Bake 20 minutes or until centers are no longer pink. Sprinkle with green onions, if desired.

  • 1 (12-oz) pkg frozen green peas
