Parmesan-Crusted Chicken
Lemon Zucchini with Tomatoes
Ingredients
- 1 (8-oz) boneless, skinless chicken breast, halved lengthwise
- ¼ cup olive-oil mayonnaise
- ¼ cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ⅛ tsp pepper
Instructions
- Preheat oven to 375°F. Place chicken in a 9-inch baking dish coated with cooking spray. Season with pepper. Mix together mayonnaise, cheese, Italian seasoning, and garlic powder; spread over chicken.
- Bake 30 to 35 minutes or until chicken is browned and done.

- 1 zucchini
- ½ cup grape tomatoes
- 1 clove garlic, minced
- 1 tsp lemon zest
- 1 Tbsp canola oil
- ⅛ tsp salt
Side Dish Instructions
- Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
- Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 5 minutes. Sprinkle with salt and desired amount of pepper.
