Lemon Zucchini with Tomatoes

Ingredients

  • 1 (8-oz) boneless, skinless chicken breast, halved lengthwise
  • ¼ cup olive-oil mayonnaise
  • ¼ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ⅛ tsp pepper

Instructions

  1. Preheat oven to 375°F. Place chicken in a 9-inch baking dish coated with cooking spray. Season with pepper. Mix together mayonnaise, cheese, Italian seasoning, and garlic powder; spread over chicken.
  2. Bake 30 to 35 minutes or until chicken is browned and done.

  • 1 zucchini
  • ½ cup grape tomatoes
  • 1 clove garlic, minced
  • 1 tsp lemon zest
  • 1 Tbsp canola oil
  • ⅛ tsp salt

Side Dish Instructions

  1. Cut zucchini lengthwise into 4 pieces; cut each piece into ½-inch-thick slices.
  2. Cook zucchini, tomatoes, garlic, and lemon zest in hot oil in a large skillet over medium heat 5 minutes. Sprinkle with salt and desired amount of pepper.
