Chicken Fried Rice

Ingredients

  • 1 cup instant brown rice
  • 1 red bell pepper, chopped
  • ½ cup matchstick carrots
  • ½ cup frozen peas
  • 1½ tsp minced ginger
  • 3 cloves garlic, minced
  • 2 tsp canola oil
  • 1½ cups shredded rotisserie chicken
  • 2 Tbsp low-sodium soy sauce
  • 1 tsp sesame oil

Instructions

  1. Cook rice according to package directions; cool completely (chill, if time allows).
  2. Cook bell pepper, carrots, peas, ginger, and garlic in hot canola oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until crisp-tender, stirring occasionally.
  3. Stir in chicken, rice, soy sauce, and sesame oil.
  4. Cook, stirring, 2 to 3 minutes or until heated.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen edamame pods
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook edamame according to package directions. Sprinkle immediately with salt.
