Chicken Fried Rice

Ingredients
- 1 cup instant brown rice
- 1 red bell pepper, chopped
- ½ cup matchstick carrots
- ½ cup frozen peas
- 1½ tsp minced ginger
- 3 cloves garlic, minced
- 2 tsp canola oil
- 1½ cups shredded rotisserie chicken
- 2 Tbsp low-sodium soy sauce
- 1 tsp sesame oil
Instructions
- Cook rice according to package directions; cool completely (chill, if time allows).
- Cook bell pepper, carrots, peas, ginger, and garlic in hot canola oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until crisp-tender, stirring occasionally.
- Stir in chicken, rice, soy sauce, and sesame oil.
- Cook, stirring, 2 to 3 minutes or until heated.

- 2 (10-oz) pkg frozen edamame pods
- ⅛ tsp salt
Side Dish Instructions
- Cook edamame according to package directions. Sprinkle immediately with salt.
