Chicken Caprese Pasta Salad

Ingredients
- 3 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ⅛ tsp pepper
- 1 pint grape tomatoes, cut in half
- 6 oz whole-grain penne pasta
- ½ (8-oz) block part-skim mozzarella cheese, cubed
- ¼ cup chopped fresh basil
- 1 cup chopped rotisserie chicken
Instructions
- Combine oil, lemon juice, salt, and pepper in a bowl. Add tomatoes, and toss to coat. Let stand 15 minutes.
- Cook pasta according to package directions; drain and rinse under cold water to cool.
- Add pasta, cheese, basil, and chicken to tomato mixture; toss. Cover and chill until ready to serve.
