Feta Chicken Meatballs

Ingredients
- 2 shallots, chopped
- 1 Tbsp olive oil
- 1½ lb ground chicken
- 1½ cups panko breadcrumbs
- 2 Tbsp minced garlic
- ½ tsp pepper
- 2 large eggs, lightly beaten
- ⅔ cup crumbled feta cheese
- 1 (8-oz) container tzatziki sauce
Instructions
- Preheat oven to 425°F. Cook shallots in hot oil in a skillet over medium-high heat 4 to 5 minutes or until lightly browned and tender.
- Gently mix together shallots, chicken, panko, garlic, pepper, and eggs. Fold in cheese. Shape chicken mixture into 1½-inch balls. Place on two large rimmed baking sheets.
- Bake 15 minutes or until no longer pink in center, shaking pans after 5 minutes. Serve with tzatziki sauce.
Side Dish Ingredients
- 1 (11-oz) pkg spring mix
- 1 pint grape tomatoes, halved
- 1 English cucumber, thinly sliced
- ½ cup crumbled feta cheese
- ⅓ cup pitted kalamata olives
- ⅓ cup Greek vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
