Ingredients

  • 2 shallots, chopped
  • 1 Tbsp olive oil
  • 1½ lb ground chicken
  • 1½ cups panko breadcrumbs
  • 2 Tbsp minced garlic
  • ½ tsp pepper
  • 2 large eggs, lightly beaten
  • ⅔ cup crumbled feta cheese
  • 1 (8-oz) container tzatziki sauce

Instructions

  1. Preheat oven to 425°F. Cook shallots in hot oil in a skillet over medium-high heat 4 to 5 minutes or until lightly browned and tender.
  2. Gently mix together shallots, chicken, panko, garlic, pepper, and eggs. Fold in cheese. Shape chicken mixture into 1½-inch balls. Place on two large rimmed baking sheets.
  3. Bake 15 minutes or until no longer pink in center, shaking pans after 5 minutes. Serve with tzatziki sauce.

  • 1 (11-oz) pkg spring mix
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, thinly sliced
  • ½ cup crumbled feta cheese
  • ⅓ cup pitted kalamata olives
  • ⅓ cup Greek vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
