Grilled Salmon with Garlic-Herb Crème Fraîche

Ingredients

  • 1 lemon
  • ½ cup crème fraîche (or use sour cream)
  • 1 (0.5-oz) pkg fresh chives, finely chopped
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp Dijon mustard
  • ¾ tsp garlic salt
  • ¼ tsp pepper
  • ¼ cup olive oil and vinegar vinaigrette
  • 6 (4-oz) salmon fillets

Instructions

  1. Preheat grill to medium-high heat. Grate zest and squeeze juice from lemon. Combine crème fraîche, lemon zest, lemon juice, chives, parsley, mustard, garlic salt, and pepper in a bowl.
  2. Brush vinaigrette over fish. Grill fish, skin sides down, 4 minutes. Turn fish over, and grill 3 to 4 minutes or until fish flakes with a fork. Serve fish with crème fraîche mixture.

Side Dish Ingredients

  • 1 large head cauliflower, cut into ¾-inch slabs
  • ⅓ cup olive oil and vinegar vinaigrette
  • ¼ tsp garlic salt
  • ¼ tsp pepper
  • 2 (8.5-oz) pouches microwavable seven-whole-grains mix

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush both sides of cauliflower slabs with vinaigrette; sprinkle with garlic salt and pepper. Grill 5 to 7 minutes per side or until tender and grill marks appear.
  2. Meanwhile, microwave grains according to package directions.
