Vegetable Lo Mein

Ingredients

  • 1 (16-oz) pkg spaghetti
  • 1 (8-oz) pkg sliced mushrooms
  • 3 cloves garlic, minced
  • 2 Tbsp dark sesame oil
  • 2 (16-oz) pkg frozen sugar snap stir-fry vegetables
  • 1 (12-oz) pkg frozen shelled edamame
  • ¼ cup low-sodium soy sauce
  • 1 Tbsp brown sugar

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Meanwhile, cook mushrooms and garlic in hot oil in a large, deep skillet over medium-high heat 5 minutes or until mushrooms are tender; add vegetables and edamame. Cook 10 minutes or until vegetables are tender.
  3. Whisk together soy sauce and sugar; add to vegetables.
  4. Stir in pasta and reserved ¼ cup pasta water; cook 2 minutes or until thoroughly heated.
