Vegetable Lo Mein
Ingredients
- 1 (16-oz) pkg spaghetti
- 1 (8-oz) pkg sliced mushrooms
- 3 cloves garlic, minced
- 2 Tbsp dark sesame oil
- 2 (16-oz) pkg frozen sugar snap stir-fry vegetables
- 1 (12-oz) pkg frozen shelled edamame
- ¼ cup low-sodium soy sauce
- 1 Tbsp brown sugar
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Meanwhile, cook mushrooms and garlic in hot oil in a large, deep skillet over medium-high heat 5 minutes or until mushrooms are tender; add vegetables and edamame. Cook 10 minutes or until vegetables are tender.
- Whisk together soy sauce and sugar; add to vegetables.
- Stir in pasta and reserved ¼ cup pasta water; cook 2 minutes or until thoroughly heated.
