Saucy Tuscan Pork Chop Skillet

Ingredients
- 2 (8-oz) bone-in pork chops
- 1 Tbsp olive oil
- ½ (14.5-oz) can fire-roasted diced tomatoes
- 1½ Tbsp low-sodium soy sauce
- ¾ cup sliced mushrooms
- ½ onion, sliced
- ½ tsp dried rosemary
Instructions
- Season pork chops with desired amount of salt and pepper.
- Heat oil in a nonstick or cast-iron skillet over medium-high heat. Cook pork chops 3 minutes per side. Remove from skillet; keep warm.
- Add tomatoes, soy sauce, mushrooms, onion, and rosemary to skillet. Bring to a simmer over medium-high heat. Cover, reduce heat to medium-low, and cook 10 minutes.
- Return pork chops to skillet, nestled in tomato mixture. Cook 5 minutes or until pork is done.
Side Dish Ingredients
- 1 Tbsp olive oil
- ½ (5-oz) pkg baby spinach
- ½ tsp garlic salt
- ⅛ tsp pepper
Side Dish Instructions
- Heat oil in a skillet over medium heat. Gradually add spinach, and cook 2 minutes or just until wilted. Stir in garlic salt and pepper.
