Saucy Tuscan Pork Chop Skillet

Ingredients

  • 2 (8-oz) bone-in pork chops
  • 1 Tbsp olive oil
  • ½ (14.5-oz) can fire-roasted diced tomatoes
  • 1½ Tbsp low-sodium soy sauce
  • ¾ cup sliced mushrooms
  • ½ onion, sliced
  • ½ tsp dried rosemary

Instructions

  1. Season pork chops with desired amount of salt and pepper.
  2. Heat oil in a nonstick or cast-iron skillet over medium-high heat. Cook pork chops 3 minutes per side. Remove from skillet; keep warm.
  3. Add tomatoes, soy sauce, mushrooms, onion, and rosemary to skillet. Bring to a simmer over medium-high heat. Cover, reduce heat to medium-low, and cook 10 minutes.
  4. Return pork chops to skillet, nestled in tomato mixture. Cook 5 minutes or until pork is done.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • ½ (5-oz) pkg baby spinach
  • ½ tsp garlic salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Heat oil in a skillet over medium heat. Gradually add spinach, and cook 2 minutes or just until wilted. Stir in garlic salt and pepper.
