Blackened Chicken Zoodle Alfredo

Ingredients

  • ½ (16-oz) pkg zucchini noodles
  • ½ Tbsp olive oil
  • ½ lb boneless, skinless chicken breasts
  • ½ Tbsp blackened seasoning
  • 1 Tbsp butter
  • ¾ cup Alfredo sauce
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Cook zucchini in hot oil in a nonstick skillet over medium heat 2 minutes or until crisp-tender. Remove from skillet, and keep warm.
  2. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with blackened seasoning.
  3. Melt butter in a nonstick skillet over medium heat; add chicken, and cook 5 to 6 minutes per side or until done. Return zucchini to skillet. Add Alfredo sauce, stirring to combine. Sprinkle with cheese.
