Blackened Chicken Zoodle Alfredo
Ingredients
- ½ (16-oz) pkg zucchini noodles
- ½ Tbsp olive oil
- ½ lb boneless, skinless chicken breasts
- ½ Tbsp blackened seasoning
- 1 Tbsp butter
- ¾ cup Alfredo sauce
- ¼ cup freshly grated Parmesan cheese
Instructions
- Cook zucchini in hot oil in a nonstick skillet over medium heat 2 minutes or until crisp-tender. Remove from skillet, and keep warm.
- Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle chicken with blackened seasoning.
- Melt butter in a nonstick skillet over medium heat; add chicken, and cook 5 to 6 minutes per side or until done. Return zucchini to skillet. Add Alfredo sauce, stirring to combine. Sprinkle with cheese.
