Honey Barbecue Meat Loaf

Ingredients

  • ½ lb ground beef
  • ¼ cup panko breadcrumbs
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 Tbsp barbecue sauce, divided
  • 1 tsp honey

Instructions

  1. Preheat oven to 350°F. Stir together beef, panko, Worcestershire, Dijon, and 1 Tbsp barbecue sauce. Shape mixture into a small loaf on a foil-lined rimmed baking sheet.
  2. Stir together 1 Tbsp barbecue sauce and honey; spread on loaf.
  3. Bake 45 minutes to 1 hour or until no longer pink in center. Serve with additional barbecue sauce.

Side Dish Ingredients

  • ½ cup long-grain white rice
  • 1½ cups chopped broccoli
  • 2 Tbsp butter, divided
  • 3 Tbsp shredded Cheddar cheese
  • 2 frozen ears corn

Side Dish Instructions

  1. Cook rice according to package directions, adding broccoli during last 5 minutes of cooking.
  2. Stir in 1 Tbsp butter and cheese; season with salt and pepper to taste.
  3. Cook corn according to package directions; brush ears with 1 Tbsp butter until melted. Season with salt and pepper to taste.
