Smoked Paprika Chicken and Spinach

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 tsp smoked paprika
  • 1½ Tbsp olive oil
  • 2 Tbsp butter
  • 1 clove garlic, minced
  • 6 Tbsp low-sodium chicken broth
  • 1 (5-oz) pkg spinach
  • 1 Tbsp chopped fresh basil

Instructions

  1. Sprinkle chicken with paprika; season lightly with salt and pepper.
  2. Cook chicken in hot oil in a nonstick skillet over medium-high heat 3 minutes per side or until browned. Remove from skillet, and set aside.
  3. Melt butter in same skillet over medium heat; add garlic, and cook 1 minute. Return chicken to skillet. Add broth, bring to a boil, reduce heat, and simmer 5 minutes or until reduced by half. Gradually add spinach, stirring until wilted; stir in basil.

  • 1 (12-oz) pkg cauliflower florets
  • 1 clove garlic, halved
  • 2 Tbsp butter, cut into pieces
  • 2 Tbsp whipping cream
  • 2 Tbsp low-sodium chicken broth
  • ¼ tsp salt

Side Dish Instructions

  1. Cook cauliflower and garlic in boiling water to cover 10 minutes or until very tender. Drain well. Return cauliflower and garlic to pot over low heat. Add butter, cream, broth, and salt. Cook 1 minute; remove from heat.
  2. Mash with a potato masher until smooth.
