Skillet-Fried Lemon Chicken

Roasted Garlic Red Potatoes and Steamed Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 large eggs
  • 2 cups panko breadcrumbs 
  • 2 tsp lemon zest
  • ½ cup olive oil, divided
  • 2 lemons, cut into wedges

Instructions

  1. Cut chicken in half crosswise and pound to ½-inch thickness in a zip-top plastic bag with the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Lightly beat eggs in a shallow bowl; combine breadcrumbs and lemon zest in a separate shallow bowl.
  3. Dip chicken in eggs, and then in panko mixture, pressing gently to adhere.
  4. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and done. Serve with lemon wedges.

  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
