Skillet-Fried Lemon Chicken
Roasted Garlic Red Potatoes and Steamed Green Beans
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 large eggs
- 2 cups panko breadcrumbs
- 2 tsp lemon zest
- ½ cup olive oil, divided
- 2 lemons, cut into wedges
Instructions
- Cut chicken in half crosswise and pound to ½-inch thickness in a zip-top plastic bag with the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Lightly beat eggs in a shallow bowl; combine breadcrumbs and lemon zest in a separate shallow bowl.
- Dip chicken in eggs, and then in panko mixture, pressing gently to adhere.
- Cook chicken, in batches, in hot oil in a large nonstick skillet over medium heat 5 minutes per side or until browned and done. Serve with lemon wedges.

- Cook potatoes according to package directions.
- Steam green beans according to package directions; season with salt and pepper to taste.
