Stuffing-Crusted Pork Chops
Roasted Sweet Potatoes and Pea-Corn Toss
Ingredients
- 2 large eggs
- 1 (6-oz) pkg herb-seasoned stuffing mix, lightly crushed
- 2 lb boneless pork loin chops
Instructions
- Preheat oven to 450ºF; place a rimmed baking sheet in oven while preheating.
- Whisk eggs in a shallow bowl. Place stuffing mix in a second shallow bowl.
- Dip pork in eggs; dredge pork in stuffing mix, pressing gently to adhere.
- Carefully remove baking sheet from oven, and coat with cooking spray. Arrange pork on hot baking sheet. Bake 15 to 20 minutes or until pork is done.

- 3 sweet potatoes
- 2 Tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 (12-oz) pkg frozen corn
- 1½ cups frozen peas
- 2 Tbsp butter
Side Dish Instructions
- Preheat oven to 450°F. Peel potatoes and cut into wedges. Toss with oil, paprika, garlic powder, and desired amount of salt and pepper on a greased baking sheet.
- Bake 20 to 25 minutes or until browned and crisp.
- Heat corn and peas according to package directions; toss with butter.
