Stuffing-Crusted Pork Chops

Roasted Sweet Potatoes and Pea-Corn Toss

Ingredients

  • 2 large eggs
  • 1 (6-oz) pkg herb-seasoned stuffing mix, lightly crushed
  • 2 lb boneless pork loin chops

Instructions

  1. Preheat oven to 450ºF; place a rimmed baking sheet in oven while preheating.
  2. Whisk eggs in a shallow bowl. Place stuffing mix in a second shallow bowl.
  3. Dip pork in eggs; dredge pork in stuffing mix, pressing gently to adhere.
  4. Carefully remove baking sheet from oven, and coat with cooking spray. Arrange pork on hot baking sheet. Bake 15 to 20 minutes or until pork is done.

  • 3 sweet potatoes
  • 2 Tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 (12-oz) pkg frozen corn
  • 1½ cups frozen peas
  • 2 Tbsp butter

Side Dish Instructions

  1. Preheat oven to 450°F. Peel potatoes and cut into wedges. Toss with oil, paprika, garlic powder, and desired amount of salt and pepper on a greased baking sheet.
  2. Bake 20 to 25 minutes or until browned and crisp.
  3. Heat corn and peas according to package directions; toss with butter.
