Mini Meat Loaves

Parmesan Mashed Potatoes and Steamed Green Beans

Ingredients

  • ¾ cup panko breadcrumbs
  • ¾ cup ketchup, divided
  • 1 Tbsp Italian seasoning
  • 2 Tbsp balsamic vinegar, divided
  • 2 large eggs, lightly beaten
  • 2 lb ground beef

Instructions

  1. Preheat oven to 425°F. Stir together breadcrumbs, ¼ cup ketchup, seasoning, 1 Tbsp vinegar, and eggs in a large bowl. Add beef, stirring gently to combine. Season with desired amount of salt and pepper.
  2. Shape mixture into 6 (4-x 3-inch) loaves, and place on a lightly greased wire rack over a rimmed baking sheet. Combine ½ cup ketchup and 1 Tbsp vinegar; brush over loaves.
  3. Bake 25 to 30 minutes or until centers are no longer pink.

Side Dish Ingredients

  • 2 (24-oz) cartons refrigerated mashed potatoes
  • 1 cup shredded Parmesan cheese
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Heat potatoes according to package directions; stir in cheese.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
