Mini Meat Loaves
Parmesan Mashed Potatoes and Steamed Green Beans
Ingredients
- ¾ cup panko breadcrumbs
- ¾ cup ketchup, divided
- 1 Tbsp Italian seasoning
- 2 Tbsp balsamic vinegar, divided
- 2 large eggs, lightly beaten
- 2 lb ground beef
Instructions
- Preheat oven to 425°F. Stir together breadcrumbs, ¼ cup ketchup, seasoning, 1 Tbsp vinegar, and eggs in a large bowl. Add beef, stirring gently to combine. Season with desired amount of salt and pepper.
- Shape mixture into 6 (4-x 3-inch) loaves, and place on a lightly greased wire rack over a rimmed baking sheet. Combine ½ cup ketchup and 1 Tbsp vinegar; brush over loaves.
- Bake 25 to 30 minutes or until centers are no longer pink.

- 2 (24-oz) cartons refrigerated mashed potatoes
- 1 cup shredded Parmesan cheese
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Heat potatoes according to package directions; stir in cheese.
- Steam green beans according to package directions; season with salt and pepper to taste.
