Mustard Sauce Chicken

Steamed Rice and Buttery Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 1½ cups chicken broth
  • 2 Tbsp Dijon mustard

Instructions

  1. Cut chicken in half crosswise; pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge chicken in flour, shaking off excess.
  2. Melt butter with oil in a large nonstick skillet over medium-high heat. Add chicken, and cook 3 to 4 minutes per side or until browned.
  3. Add broth and mustard; cook until sauce is thickened and chicken is done.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 2 (8-oz) pkg thin green beans
  • 2 Tbsp butter

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Steam green beans according to package directions; toss with butter until melted and season with salt and pepper to taste.
