Mustard Sauce Chicken
Steamed Rice and Buttery Green Beans
Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ cup all-purpose flour
- 2 Tbsp butter
- 2 Tbsp olive oil
- 1½ cups chicken broth
- 2 Tbsp Dijon mustard
Instructions
- Cut chicken in half crosswise; pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Season lightly with salt and pepper. Dredge chicken in flour, shaking off excess.
- Melt butter with oil in a large nonstick skillet over medium-high heat. Add chicken, and cook 3 to 4 minutes per side or until browned.
- Add broth and mustard; cook until sauce is thickened and chicken is done.

- 2 cups long-grain white rice
- 2 (8-oz) pkg thin green beans
- 2 Tbsp butter
Side Dish Instructions
- Cook rice according to package directions.
- Steam green beans according to package directions; toss with butter until melted and season with salt and pepper to taste.
