French Onion Meatball Subs

Ingredients

  • 1 onion, thinly sliced
  • 1 Tbsp butter, melted
  • ½ (32-oz) pkg frozen fully cooked homestyle meatballs
  • ¼ cup beef broth
  • 2 hoagie rolls
  • 4 slices provolone cheese

Instructions

  1. Cook onion with a pinch of sugar in melted butter in a large skillet, covered, over medium heat 10 minutes. Uncover, increase heat to medium-high, and cook 5 minutes until browned and tender. Season with salt and pepper.
  2. Meanwhile, heat 12 meatballs according to package directions for microwave. Add broth and meatballs to skillet with onion, tossing to coat.
  3. Preheat broiler. Toast rolls, cut sides up, on a baking sheet. Add meatballs with onions to bottom rolls, and top with cheese. Broil 1 to 2 minutes or until cheese melts. Add tops.

  • 1 large tomato
  • Olive oil

Side Dish Instructions

  1. Slice tomato; arrange on a plate. Drizzle with oil; sprinkle with kosher salt and pepper to taste.
