French Onion Meatball Subs

Ingredients
- 1 onion, thinly sliced
- 1 Tbsp butter, melted
- ½ (32-oz) pkg frozen fully cooked homestyle meatballs
- ¼ cup beef broth
- 2 hoagie rolls
- 4 slices provolone cheese
Instructions
- Cook onion with a pinch of sugar in melted butter in a large skillet, covered, over medium heat 10 minutes. Uncover, increase heat to medium-high, and cook 5 minutes until browned and tender. Season with salt and pepper.
- Meanwhile, heat 12 meatballs according to package directions for microwave. Add broth and meatballs to skillet with onion, tossing to coat.
- Preheat broiler. Toast rolls, cut sides up, on a baking sheet. Add meatballs with onions to bottom rolls, and top with cheese. Broil 1 to 2 minutes or until cheese melts. Add tops.

- Slice tomato; arrange on a plate. Drizzle with oil; sprinkle with kosher salt and pepper to taste.
