Brined Apple-Rosemary Pork Chops

Ingredients

  • 4 cups no-sugar-added apple juice
  • ¼ cup kosher salt
  • ¼ cup sugar
  • 6 sprigs fresh rosemary
  • 4 cloves garlic, peeled and halved
  • 2 lb boneless pork sirloin chops

Instructions

  1. Combine apple juice, salt, sugar, rosemary, and garlic in a large zip-top plastic bag. Add pork chops, seal bag, and chill at least 4 hours or up to 2 days.
  2. Preheat grill or grill pan to medium-high heat. Remove pork from brine; discard brine. Pat pork dry with paper towels. Grill pork, covered, 5 to 6 minutes per side or to desired doneness. Let stand 5 minutes before serving.

  • 2 (4.7-oz) pkg cheesy scalloped potatoes
  • 1 lb green beans, trimmed
  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • 2 Tbsp brown sugar

Side Dish Instructions

  1. Prepare potatoes according to package directions.
  2. Cook beans in boiling water to cover 6 minutes or until crisp-tender. Drain and rinse under cold water; drain again.
  3. Melt butter in a large skillet over medium heat; add garlic, and cook 30 seconds. Add beans and brown sugar; cook, stirring, 1 minute or until thoroughly heated.
