Cheeseburger Tostadas
Refried Black Beans
Ingredients
- 1½ lb ground beef
- 3 Tbsp ketchup
- 2 Tbsp yellow mustard
- 2 cups shredded Cheddar cheese, divided
- 6 gluten-free tostada shells (see Note)
- 3 cups shredded romaine lettuce (or use iceberg)
- 2 Roma tomatoes, chopped
- ¾ cup spicy pickle chips (or use dill pickle chips)
Instructions
- Preheat oven to 450°F. Cook beef in a large skillet over medium-high heat 8 to 10 minutes or until browned and crumbly; drain and stir in ketchup and mustard. Season with salt and pepper. Stir in ½ cup cheese until melted.
- Place tostada shells on a baking sheet. Top with beef mixture and 1½ cups cheese. Bake 2 to 4 minutes or just until cheese melts.
- Top with lettuce, tomatoes, and pickles; drizzle with more ketchup, if desired.

- 1 (15.4-oz) can gluten-free refried black beans
- ¼ cup sour cream
- 1 tsp hot sauce
- ⅓ cup shredded Cheddar cheese
Side Dish Instructions
- Heat beans and sour cream in a saucepan over medium heat. Stir in hot sauce; sprinkle with cheese.
