Cheeseburger Tostadas

Ingredients

  • 1½ lb ground beef
  • 3 Tbsp ketchup
  • 2 Tbsp yellow mustard
  • 2 cups shredded Cheddar cheese, divided
  • 6 gluten-free tostada shells (see Note)
  • 3 cups shredded romaine lettuce (or use iceberg)
  • 2 Roma tomatoes, chopped
  • ¾ cup spicy pickle chips (or use dill pickle chips)

Instructions

  1. Preheat oven to 450°F. Cook beef in a large skillet over medium-high heat 8 to 10 minutes or until browned and crumbly; drain and stir in ketchup and mustard. Season with salt and pepper. Stir in ½ cup cheese until melted.
  2. Place tostada shells on a baking sheet. Top with beef mixture and 1½ cups cheese. Bake 2 to 4 minutes or just until cheese melts.
  3. Top with lettuce, tomatoes, and pickles; drizzle with more ketchup, if desired.

  • 1 (15.4-oz) can gluten-free refried black beans
  • ¼ cup sour cream
  • 1 tsp hot sauce
  • ⅓ cup shredded Cheddar cheese

Side Dish Instructions

  1. Heat beans and sour cream in a saucepan over medium heat. Stir in hot sauce; sprinkle with cheese.
