Easy Seafood Paella
Ingredients
- ½ onion, chopped
- ½ red bell pepper, chopped
- 1½ Tbsp olive oil
- 1 large clove garlic, minced
- 1 (5-oz) pkg yellow rice
- 1 (14.5-oz) can unsalted chicken broth
- ¼ tsp pepper
- 1 (12-oz) pkg frozen raw seafood medley (calamari, cooked mussels, and shrimp; see Note), thawed and drained
- 1 cup grape tomatoes, halved
- 1 cup frozen sweet peas
- 3 Tbsp chopped fresh parsley
Instructions
- Cook onion and bell pepper in hot oil in a deep skillet over medium-high heat 5 minutes or until tender. Add garlic, and cook 30 seconds. Add rice; cook, stirring, 1 minute.
- Stir in broth and pepper; bring to a boil, reduce heat, cover, and simmer 10 minutes. Stir in thawed seafood, tomatoes, and peas. Cover, and cook 10 to 15 minutes longer or until shrimp turn pink and liquid is absorbed; stir in parsley.
