Blackened Catfish

Ingredients

  • 2 lb catfish fillets, patted dry (or use snapper or tilapia)
  • 4 Tbsp butter, melted
  • 2 Tbsp blackened seasoning
  • 3 Tbsp olive oil, divided

Instructions

  1. Dip fish in melted butter; sprinkle with seasoning. Heat a cast-iron skillet over high heat on stovetop.
  2. Cook fish, in batches, in 1½ Tbsp hot oil per batch, in skillet 3 to 4 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • 1 cup mayonnaise
  • 3 Tbsp apple cider vinegar
  • 2 Tbsp spicy brown mustard
  • 2 tsp Creole seasoning
  • 1 (16-oz) pkg angel hair coleslaw (or use tricolor coleslaw)
  • 1 green bell pepper, cut in julienne strips
  • 2 green onions, thinly sliced

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, mustard, and Creole seasoning in a large bowl. Add coleslaw, bell pepper, and onions; toss.
