Blackened Catfish
Cajun SlawIngredients
- 2 lb catfish fillets, patted dry (or use snapper or tilapia)
- 4 Tbsp butter, melted
- 2 Tbsp blackened seasoning
- 3 Tbsp olive oil, divided
Instructions
- Dip fish in melted butter; sprinkle with seasoning. Heat a cast-iron skillet over high heat on stovetop.
- Cook fish, in batches, in 1½ Tbsp hot oil per batch, in skillet 3 to 4 minutes per side or until fish flakes with a fork.
Side Dish Ingredients
- 1 cup mayonnaise
- 3 Tbsp apple cider vinegar
- 2 Tbsp spicy brown mustard
- 2 tsp Creole seasoning
- 1 (16-oz) pkg angel hair coleslaw (or use tricolor coleslaw)
- 1 green bell pepper, cut in julienne strips
- 2 green onions, thinly sliced
Side Dish Instructions
- Whisk together mayonnaise, vinegar, mustard, and Creole seasoning in a large bowl. Add coleslaw, bell pepper, and onions; toss.
