Cilantro-Lime Chicken Tacos

Ingredients

  • 2 Tbsp mayonnaise
  • 2 Tbsp sour cream
  • 1 Tbsp chopped fresh cilantro
  • 2 tsp minced garlic
  • 2 tsp lime juice
  • 4 corn tortillas
  • 1 cup shredded rotisserie chicken
  • ½ cup chopped romaine lettuce
  • 1 avocado, sliced

Instructions

  1. Stir together mayonnaise, sour cream, cilantro, garlic, and lime juice in a small bowl.
  2. Heat tortillas according to package directions (see Note). Divide chicken, lettuce, and avocado among tortillas. Drizzle with sauce.

  • 1 cup frozen whole kernel corn, thawed
  • 1 Tbsp olive oil
  • 1 (4-oz) can mild diced green chiles
  • ½ tsp ground cumin
  • 1 Roma tomato, seeded and diced
  • ¼ cup crumbled queso fresco
  • 1 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Cook corn in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned.
  2. Stir in chiles and cumin; cook 4 minutes. Remove from heat; stir in tomato, cheese, and cilantro.
