Ingredients

  • ¾ lb ground beef (or use ground turkey)
  • ½ (8-oz) pkg chopped onion
  • 1 Tbsp fajita seasoning mix
  • ⅓ cup salsa
  • 1 (8.8-oz) pouch microwavable brown rice
  •  1 (15-oz) can pinto beans, drained and rinsed
  • 2 cups shredded iceberg lettuce
  • 1 cup Mexican-blend cheese
  • ½ (13-oz) pkg tortilla chips

Instructions

  1. Cook beef and onion in a nonstick skillet over medium-high heat until browned and crumbly. Drain, return to skillet, and add seasoning and ¼ cup water. Simmer 1 to 2 minutes. Stir in salsa.
  2. Cook rice according to package directions. Toss together beans and rice; season with salt and pepper.
  3. Arrange shredded lettuce, beef mixture, rice and beans in each bowl. Top with cheese, a handful of coarsely crushed chips, and other favorite toppings.
