Ingredients

  • 6 (6-oz) grouper fillets
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup finely chopped pecans
  • ¾ cup panko breadcrumbs
  • 2 Tbsp olive oil
  • 2 large eggs

Instructions

  1. Preheat oven to 400°F. Sprinkle fish with salt and pepper.
  2. Combine nuts, breadcrumbs, and oil in a shallow dish. Beat eggs lightly in another shallow dish. Dip fish in egg; dredge in nut mixture, gently pressing to adhere.
  3. Place fish on a large baking sheet. Bake 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • ¾ cup quick-cooking farro
  • 2 Gala apples, sliced
  • ½ cup chopped pecans
  • ½ cup dried cranberries
  • ½ cup olive oil vinaigrette (or use apple cider vinaigrette)
  • 1 (5-oz) pkg spring mix

Side Dish Instructions

  1. Cook farro according to package directions.
  2. Toss together farro, apples, nuts, cranberries, and vinaigrette in a large bowl. Fold in spring mix or serve farro mixture over spring mix.
