Pecan-Crusted Grouper
Apple and Pecan Farro Salad

Ingredients
- 6 (6-oz) grouper fillets
- ½ tsp salt
- ½ tsp pepper
- ¾ cup finely chopped pecans
- ¾ cup panko breadcrumbs
- 2 Tbsp olive oil
- 2 large eggs
Instructions
- Preheat oven to 400°F. Sprinkle fish with salt and pepper.
- Combine nuts, breadcrumbs, and oil in a shallow dish. Beat eggs lightly in another shallow dish. Dip fish in egg; dredge in nut mixture, gently pressing to adhere.
- Place fish on a large baking sheet. Bake 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- ¾ cup quick-cooking farro
- 2 Gala apples, sliced
- ½ cup chopped pecans
- ½ cup dried cranberries
- ½ cup olive oil vinaigrette (or use apple cider vinaigrette)
- 1 (5-oz) pkg spring mix
Side Dish Instructions
- Cook farro according to package directions.
- Toss together farro, apples, nuts, cranberries, and vinaigrette in a large bowl. Fold in spring mix or serve farro mixture over spring mix.
