Loaded Southwest Sweet Potato Fries

Ingredients

  • 2 (20-oz) pkg frozen sweet potatoes fries
  • 1 (12-oz) pkg frozen corn kernels, thawed
  • 1 tsp ground cumin
  • 2 Tbsp olive oil
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (7-oz) can mild diced green chiles
  • ½ cup mayonnaise
  • 2 tsp lime juice
  • 1 tsp chipotle chili powder
  • 3 Roma tomatoes, chopped
  • 1 cup crumbled queso fresco
  • ½ cup chopped fresh cilantro (optional)

Instructions

  1. Bake fries according to package directions.
  2. Meanwhile, cook corn and cumin in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Stir in beans and chiles; cook 3 minutes or until thoroughly heated.
  3. Stir together mayonnaise, lime juice, and chili powder in a small bowl, adding water or milk, if needed, to reach a pourable consistency.
  4. Divide fries among 6 plates. Top with corn mixture, tomatoes, and cheese. Drizzle with chipotle mayonnaise. Sprinkle with cilantro, if desired.
