Crispy Burrito Wraps

Ingredients

  • 1½ lb ground beef
  • 1 (1-oz) envelope taco seasoning mix
  • ¼ cup water
  • 8 burrito-size flour tortillas
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 4 Tbsp butter, divided
  • 1 (8-oz) carton sour cream

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet. Add seasoning mix and water; cook until mixture is very thick.
  2. Spoon beef mixture down centers of tortillas; sprinkle with cheese. Fold in sides of tortillas, and roll up. Wipe skillet clean.
  3. Melt 2 Tbsp butter in skillet over medium heat. Add 4 wraps, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with 2 Tbsp butter and remaining wraps. Serve with sour cream.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 2 Tbsp tomato paste
  • 1 Tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic salt
  • 1 lb seedless grapes

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook tomato paste in hot oil in a large skillet over medium heat 2 minutes.
  3. Remove from heat; stir in hot cooked rice, oregano, and garlic salt. Season with salt and pepper to taste.
  4. Serve grapes on the side.
