Cheese Grits and Roasted Asparagus

Ingredients

  • ½ (10-oz) pkg frozen seasoning blend (diced onion, bell peppers, and celery)
  • 1 Tbsp olive oil
  • ½ lb peeled and deveined, large raw shrimp
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 1½ tsp gluten-free Cajun seasoning

Instructions

  1. Cook seasoning blend in hot oil in a large, deep skillet over medium-high heat 6 minutes.
  2. Add shrimp, tomatoes, and Cajun seasoning; simmer 6 to 8 minutes or until shrimp turn pink and sauce is thickened.

Side Dish Ingredients

  • ½ lb asparagus, trimmed
  • 2 tsp olive oil
  • ⅛ tsp salt, divided
  • ⅛ tsp pepper, divided
  • ½ cup gluten-free quick-cooking grits
  • ½ cup shredded Cheddar cheese
  • ½ Tbsp butter

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together asparagus, oil, and a dash each salt and pepper on a rimmed baking sheet; spread in a single layer.
  2. Roast 10 to 12 minutes or until tender and tips are browned.
  3. Meanwhile, cook grits according to package directions; stir in cheese, butter, and a dash each salt and pepper.
