Ingredients
- ⅓ cup instant brown rice
- ½ (20-oz) pkg frozen pepper and onion blend
- 1 lime
- 1 cup fat-free refried beans
- 3 Tbsp chopped fresh cilantro
- 2 burrito-size flour tortillas
- ½ avocado, cubed
- ¼ cup fresh salsa
Instructions
- Cook rice and vegetables according to package directions.
- Meanwhile, grate ¼ tsp zest and squeeze juice from lime into a medium bowl. Add beans and cilantro; stir together.
- Divide rice, bean mixture, and vegetables between tortillas. Top with avocado. Fold in sides of tortillas; roll up to completely enclose filling. Serve with salsa.
