Ingredients

  • ⅓ cup instant brown rice
  • ½ (20-oz) pkg frozen pepper and onion blend
  • 1 lime
  • 1 cup fat-free refried beans
  • 3 Tbsp chopped fresh cilantro
  • 2 burrito-size flour tortillas
  • ½ avocado, cubed
  • ¼ cup fresh salsa

Instructions

  1. Cook rice and vegetables according to package directions.
  2. Meanwhile, grate ¼ tsp zest and squeeze juice from lime into a medium bowl. Add beans and cilantro; stir together.
  3. Divide rice, bean mixture, and vegetables between tortillas. Top with avocado. Fold in sides of tortillas; roll up to completely enclose filling. Serve with salsa.
