Asian Ground Beef Salad

Ingredients

  • 3 Tbsp rice wine vinegar
  • 2 Tbsp canola oil 
  • 1 Tbsp sesame oil
  • ½ Tbsp fish sauce
  • ½ tsp sambal oelek (optional)
  • 1 tsp minced ginger
  • ¾ tsp garlic salt, divided
  • ½ cup chopped fresh cilantro
  • 1¼ lb ground beef
  • ½ red bell pepper, cut into matchstick pieces
  • ½ cup matchstick-cut carrots
  • 2 green onions, cut into matchstick pieces
  • 1 (6-oz) pkg spring mix or mixed baby greens
  • Toasted sesame seeds (optional)

Instructions

  1. Combine vinegar, canola oil, sesame oil, fish sauce, sambal oelek, ginger, ¼ tsp garlic salt, and cilantro in a bowl. Set aside.
  2. Cook beef in a large skillet over medium-high heat 6 minutes until browned and crumbly. Drain off excess liquid. Stir in ½ tsp garlic salt.
  3. Add bell pepper and carrots. Cook 3 minutes or until vegetables are slightly tender. Stir in half of vinegar mixture and onions. Remove from heat.
  4. Toss salad greens with remaining vinegar mixture. Divide greens among 3 plates. Top with beef mixture. Sprinkle with sesame seeds, if desired.
