Asian Ground Beef Salad
Ingredients
- 3 Tbsp rice wine vinegar
- 2 Tbsp canola oil
- 1 Tbsp sesame oil
- ½ Tbsp fish sauce
- ½ tsp sambal oelek (optional)
- 1 tsp minced ginger
- ¾ tsp garlic salt, divided
- ½ cup chopped fresh cilantro
- 1¼ lb ground beef
- ½ red bell pepper, cut into matchstick pieces
- ½ cup matchstick-cut carrots
- 2 green onions, cut into matchstick pieces
- 1 (6-oz) pkg spring mix or mixed baby greens
- Toasted sesame seeds (optional)
Instructions
- Combine vinegar, canola oil, sesame oil, fish sauce, sambal oelek, ginger, ¼ tsp garlic salt, and cilantro in a bowl. Set aside.
- Cook beef in a large skillet over medium-high heat 6 minutes until browned and crumbly. Drain off excess liquid. Stir in ½ tsp garlic salt.
- Add bell pepper and carrots. Cook 3 minutes or until vegetables are slightly tender. Stir in half of vinegar mixture and onions. Remove from heat.
- Toss salad greens with remaining vinegar mixture. Divide greens among 3 plates. Top with beef mixture. Sprinkle with sesame seeds, if desired.
