Barbecue Chicken Lettuce Wraps

Ingredients

  • ⅔ cup mayonnaise
  • 3 Tbsp apple cider vinegar
  • 1 tsp garlic salt
  • ¼ tsp pepper 
  • 3 cups tricolor coleslaw
  • 4 green onions, chopped
  • ½ cup diced cucumber
  • 4 cups shredded rotisserie chicken
  • ½ cup no-sugar-added barbecue sauce
  • 12 butter or romaine lettuce leaves
  • 1 (2.12-oz) pkg Cheddar cheese crisps, crushed

Instructions

  1. Combine mayonnaise, vinegar, garlic salt, and pepper in a medium bowl. Add coleslaw, onions, and cucumber, stirring to combine.
  2. Combine shredded chicken and barbecue sauce in a separate bowl.
  3. Divide slaw among lettuce leaves. Top with chicken, and sprinkle with crushed cheese crisps.
