Fajita Chicken Salad

Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ (1-oz) envelope taco seasoning mix
- 1 red onion, thinly sliced
- 2 green bell peppers, thinly sliced
- 3 Tbsp olive oil
- 8 cups chopped romaine lettuce
- 2 Roma tomatoes, halved lengthwise and sliced
- 2 avocados, sliced
- 3 Tbsp salsa verde (optional)
- ¾ cup Ranch dressing
Instructions
- Thinly slice chicken, and sprinkle with seasoning mix.
- Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
- Divide lettuce among 6 plates. Top with chicken mixture, tomatoes, and avocado. Stir salsa into dressing, if desired. Drizzle salads with dressing.
