Fajita Chicken Salad

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ (1-oz) envelope taco seasoning mix
  • 1 red onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 3 Tbsp olive oil
  • 8 cups chopped romaine lettuce
  • 2 Roma tomatoes, halved lengthwise and sliced
  • 2 avocados, sliced
  • 3 Tbsp salsa verde (optional)
  • ¾ cup Ranch dressing

Instructions

  1. Thinly slice chicken, and sprinkle with seasoning mix.
  2. Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
  3. Divide lettuce among 6 plates. Top with chicken mixture, tomatoes, and avocado. Stir salsa into dressing, if desired. Drizzle salads with dressing.
