Blackened Salmon Salad with Avocado and Ranch

Ingredients

  • 2 Tbsp blackened seasoning
  • 6 (4-oz) salmon fillets
  • 2 Tbsp olive oil
  • 2 (10-oz) pkg chopped romaine lettuce
  • 1 cucumber, sliced
  • 2 Roma tomatoes, cut into wedges
  • ⅓ cup sliced avocado
  • 1 cup Ranch dressing
  • ½ cup French fried onions

Instructions

  1. Rub blackened seasoning on both sides of salmon fillets. Cook salmon in hot oil in a large skillet over medium heat 5 minutes per side.
  2. Toss together lettuce, cucumber, tomatoes, and avocado; divide into 6 portions. Top each salad with a fillet.
  3. Drizzle dressing over each salad. Sprinkle with onions.
