Ingredients

  • 1½ lb top sirloin steak
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 6 large eggs

Instructions

  1. Sprinkle steak with ½ tsp each salt and pepper. Cook in 1 Tbsp hot oil in a nonstick skillet over medium-high heat 5 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
  2. Heat 2 Tbsp oil in a skillet over medium heat; crack eggs into skillet, and cook 2 minutes per side or until whites are set and yolks are cooked to desired doneness. Sprinkle with ¼ tsp each salt and pepper.
