Peanut Sauce Flank Steak

Ingredients

  • 1½ lb flank steak
  • ¾ cup coconut milk
  • ⅓ cup creamy peanut butter
  • 1 Tbsp fresh lime juice
  • 1 Tbsp gluten-free soy sauce
  • ½ tsp Sriracha hot sauce (optional)

Instructions

  1. Preheat grill to medium-high heat. Sprinkle steak lightly with salt and pepper. Grill, covered, 5 to 6 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Whisk together coconut milk, peanut butter, lime juice, soy sauce, and, if desired, Sriracha. Add water, if needed, to reach desired consistency. Serve sauce with steak.
