Pecan-Crusted Mahi Mahi
Ingredients
- ½ cup finely ground pecans
- ½ cup Italian panko breadcrumbs
- 1½ lb frozen mahi mahi fillets, thawed (or use grouper)
- ½ cup all-purpose flour
- 2 large eggs, lightly beaten
- 2 Tbsp vegetable oil
Instructions
- Combine nuts and breadcrumbs in a shallow bowl.
- Season fish with desired amount of salt and pepper, and dust both sides with flour.
- Dip fish in beaten eggs, and dredge in breadcrumb mixture, pressing gently to adhere.
- Cook fish in hot oil in a large skillet 3 to 4 minutes per side or until browned and fish flakes with a fork.
