Pecan-Crusted Mahi Mahi

Ingredients

  • ½ cup finely ground pecans
  • ½ cup Italian panko breadcrumbs
  • 1½ lb frozen mahi mahi fillets, thawed (or use grouper)
  • ½ cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 2 Tbsp vegetable oil

Instructions

  1. Combine nuts and breadcrumbs in a shallow bowl.
  2. Season fish with desired amount of salt and pepper, and dust both sides with flour.
  3. Dip fish in beaten eggs, and dredge in breadcrumb mixture, pressing gently to adhere.
  4. Cook fish in hot oil in a large skillet 3 to 4 minutes per side or until browned and fish flakes with a fork.
