Sheet Pan Sesame Chicken and Broccoli

Ingredients

  • 3 Tbsp sesame oil
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp gochujang (Korean chile paste)
  • 2 lb boneless, skinless chicken thighs, cut into chunks
  • 2 (12-oz) broccoli florets
  • 2 red bell peppers, cut into chunks
  • 2 Tbsp honey
  • 1 Tbsp sesame seeds

Instructions

  1. Preheat oven to 425°F. Stir together oil, soy sauce, and gochujang in a bowl. Add chicken, broccoli, and bell peppers; toss. Divide between 2 large rimmed baking sheets; spread in even layers.
  2. Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
  3. Drizzle with honey, and sprinkle with sesame seeds; stir.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable brown basmati rice
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Cook rice according to package directions. Stir in cilantro.
