Pork and Pineapple Kabobs

Ingredients

  • 2 (1-lb) pork tenderloins, cut into 1½-inch pieces
  • 1 (16-oz) container pineapple chunks
  • 2 Tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 4 green onions, cut into 3-inch pieces

Instructions

  1. Combine pork, pineapple, oil, chili powder, salt, and pepper in a large bowl; toss.
  2. Preheat grill to medium-high heat. Alternately thread pork, pineapple, and onions onto metal skewers.
  3. Grill kabobs, 12 to 15 minutes, turning occasionally, until pork is done.

Side Dish Ingredients

  • ¼ cup olive oil
  • 2 Tbsp rice vinegar
  • 6 heads baby bok choy, halved
  • ¼ tsp salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush oil and vinegar over bok choy; sprinkle with salt and red pepper.
  2. Grill bok choy, covered, 2 minutes per side or until lightly browned.
