Pork and Pineapple Kabobs
Grilled Baby Bok ChoyIngredients
- 2 (1-lb) pork tenderloins, cut into 1½-inch pieces
- 1 (16-oz) container pineapple chunks
- 2 Tbsp olive oil
- 1 tsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 4 green onions, cut into 3-inch pieces
Instructions
- Combine pork, pineapple, oil, chili powder, salt, and pepper in a large bowl; toss.
- Preheat grill to medium-high heat. Alternately thread pork, pineapple, and onions onto metal skewers.
- Grill kabobs, 12 to 15 minutes, turning occasionally, until pork is done.
Side Dish Ingredients
- ¼ cup olive oil
- 2 Tbsp rice vinegar
- 6 heads baby bok choy, halved
- ¼ tsp salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Preheat grill to medium-high heat. Brush oil and vinegar over bok choy; sprinkle with salt and red pepper.
- Grill bok choy, covered, 2 minutes per side or until lightly browned.
