Ingredients

  • 6 slices center cut bacon, chopped
  • 12 oz whole-grain penne pasta
  • 3 cups shredded rotisserie chicken
  • 1 (1-oz) envelope Ranch dressing mix
  • 6 oz cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp.
  2. Meanwhile, cook pasta according to package directions in a large saucepan. Drain, reserving 1 cup pasta water. Return pasta to pan.
  3. Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in Cheddar until melted, adding pasta water to create a sauce. Sprinkle with parsley.

  • 1 (10-oz) pkg spinach
  • 1 pint grape tomatoes
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
