Cheesy Ranch-Chicken Pasta

Ingredients
- 6 slices center cut bacon, chopped
- 12 oz whole-grain penne pasta
- 3 cups shredded rotisserie chicken
- 1 (1-oz) envelope Ranch dressing mix
- 6 oz cream cheese, softened
- 1 cup shredded Cheddar cheese
- ¼ cup chopped fresh parsley
Instructions
- Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp.
- Meanwhile, cook pasta according to package directions in a large saucepan. Drain, reserving 1 cup pasta water. Return pasta to pan.
- Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in Cheddar until melted, adding pasta water to create a sauce. Sprinkle with parsley.

- 1 (10-oz) pkg spinach
- 1 pint grape tomatoes
- ½ cup olive oil vinaigrette

- Toss together all ingredients in a large bowl.
