Black Bean Soup

Ingredients
- ½ onion, chopped
- 1 clove garlic, minced
- 1 Tbsp olive oil
- ½ (14.5-oz) can low-sodium vegetable broth
- 1½ (15.5-oz) cans black beans, drained and rinsed
- ½ (10-oz) can diced tomatoes with green chiles
- 1 tsp ground cumin
- ½ cup sour cream
- 2 Tbsp chopped fresh cilantro
Instructions
- Sauté onion and garlic in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add broth, beans, tomatoes, and cumin.
- Cook 10 minutes or until bubbly; lightly mash soup for a thicker texture.
- Top with sour cream and cilantro.

- 1 grapefruit, peeled and sliced
- 1 orange, peeled and sliced
Side Dish Instructions
- Combine all ingredients in a bowl; chill until ready to serve.
