Black Bean Soup

Ingredients

  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ½ (14.5-oz) can low-sodium vegetable broth
  • 1½ (15.5-oz) cans black beans, drained and rinsed
  • ½ (10-oz) can diced tomatoes with green chiles
  • 1 tsp ground cumin
  • ½ cup sour cream
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Sauté onion and garlic in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add broth, beans, tomatoes, and cumin.
  2. Cook 10 minutes or until bubbly; lightly mash soup for a thicker texture.
  3. Top with sour cream and cilantro.

  • 1 avocado sliced
  • 1 grapefruit, peeled and sliced
  • 1 orange, peeled and sliced

Side Dish Instructions

  1. Combine all ingredients in a bowl; chill until ready to serve.
