Ingredients

  • ½ lb skirt steak (or use flank steak or London broil)
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ¼ cup chopped onion
  • 1 (8-oz) pkg sliced mushrooms
  • 1 Tbsp olive oil
  • 1 tsp minced garlic
  • ½ cup low-sodium chicken broth
  • 1 tsp all-purpose flour

Instructions

  1. Preheat broiler. Sprinkle steak with ⅛ tsp each salt and pepper. Broil 4 to 6 minutes per side or to desired doneness. Let stand 5 to 10 minutes before slicing across the grain.
  2. Meanwhile, cook onion and mushrooms in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender. Add garlic and ⅛ tsp each salt and pepper; cook 1 minute or until fragrant.
  3. Stir in broth and flour; reduce heat to medium, and cook 4 minutes or until thickened. Serve gravy with steak.

  • 2 cups spring mix
  • ½ cup shredded carrots
  • ½ English cucumber, sliced
  • 3 Tbsp olive oil vinaigrette

  1. Cook potatoes according to package directions.
  2. Toss together lettuce, carrots, cucumber, and vinaigrette in a bowl.
