Balsamic-Garlic Beef Strips
Blue Cheese Chopped SaladIngredients
- 2 lb sirloin steak, thinly sliced
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp canola oil, divided
- 4 cloves garlic, minced
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- ¾ cup low-sodium beef broth
- ¼ cup balsamic vinegar
Instructions
- Sprinkle steak with salt and pepper. Cook steak in 1 Tbsp hot oil in a Dutch oven over medium-high heat 6 minutes or until browned. Add garlic; cook 1 minute. Remove beef mixture from pot.
- Add 2 Tbsp oil, bell peppers, and onion to pot. Cook 6 minutes, stirring occasionally, or until vegetables are tender.
- Stir in beef mixture, broth, and vinegar. Reduce heat, and simmer 5 minutes or until mixture thickens.
Side Dish Ingredients
- 1 (9-oz) pkg chopped romaine lettuce
- 1 pint grape tomatoes, halved
- ½ cup blue cheese dressing
Side Dish Instructions
- Toss together all ingredients in a bowl. Season with pepper to taste.
