Lemon-Pepper Chicken Pasta

Ingredients

  • ½ (18-oz) pkg family-size frozen mozzarella cheese ravioli
  • ½ lb thick slice deli lemon-pepper chicken (or use 2 cups chopped lemon-pepper rotisserie chicken)
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 Tbsp lemon juice
  • ½ Tbsp lemon zest
  • 1 cup shredded Parmesan cheese
  • ¼ cup chopped fresh flat-leaf parsley (or basil)

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Cut deli chicken into cubes.
  3. Heat oil and butter in a large skillet over medium heat until butter melts. Add lemon juice and zest. Season sauce with salt and pepper; cook over LOW heat 1 minute.
  4. Toss together ravioli, ¼ cup pasta water, and lemon sauce in a large bowl. Add chicken and cheese; toss again. Sprinkle with parsley. Season again to taste.

Side Dish Instructions

  1. Toss together salad ingredients; chill until ready to serve. Season with salt and pepper to taste.
