Lemon-Pepper Chicken Pasta
Quick CaesarIngredients
- ½ (18-oz) pkg family-size frozen mozzarella cheese ravioli
- ½ lb thick slice deli lemon-pepper chicken (or use 2 cups chopped lemon-pepper rotisserie chicken)
- 2 Tbsp olive oil
- 2 Tbsp butter
- 2 Tbsp lemon juice
- ½ Tbsp lemon zest
- 1 cup shredded Parmesan cheese
- ¼ cup chopped fresh flat-leaf parsley (or basil)
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Cut deli chicken into cubes.
- Heat oil and butter in a large skillet over medium heat until butter melts. Add lemon juice and zest. Season sauce with salt and pepper; cook over LOW heat 1 minute.
- Toss together ravioli, ¼ cup pasta water, and lemon sauce in a large bowl. Add chicken and cheese; toss again. Sprinkle with parsley. Season again to taste.

- Toss together salad ingredients; chill until ready to serve. Season with salt and pepper to taste.
