Seared Flounder

Sun-Dried Tomato Pilaf and Green Beans

Ingredients

  • 3 (6-oz) flounder fillets
  • 2 Tbsp olive oil
  • ½ cup sour cream
  • 1 to 2 Tbsp chopped fresh dill
  • 1 Tbsp lemon juice

Instructions

  1. Sprinkle fish lightly with salt and pepper. Cook fish in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
  2. Combine sour cream, dill, lemon juice, and salt and pepper to taste in a bowl; serve over fish. Sprinkle with extra dill, if desired.

Side Dish Ingredients

  • ¾ cup long-grain brown rice
  • ¼ cup sun-dried tomatoes in oil, drained and chopped
  • 1 (12-oz) pkg green beans
  • 1½ tsp olive oil

Side Dish Instructions

  1. Cook rice according to package directions; toss with tomatoes and salt and pepper to taste.
  2. Meanwhile, cook green beans according to package directions; toss with oil and salt and pepper to taste.
