Seared Flounder
Sun-Dried Tomato Pilaf and Green BeansIngredients
- 3 (6-oz) flounder fillets
- 2 Tbsp olive oil
- ½ cup sour cream
- 1 to 2 Tbsp chopped fresh dill
- 1 Tbsp lemon juice
Instructions
- Sprinkle fish lightly with salt and pepper. Cook fish in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until fish flakes with a fork.
- Combine sour cream, dill, lemon juice, and salt and pepper to taste in a bowl; serve over fish. Sprinkle with extra dill, if desired.

- ¾ cup long-grain brown rice
- ¼ cup sun-dried tomatoes in oil, drained and chopped
- 1 (12-oz) pkg green beans
- 1½ tsp olive oil
