Creole Pork Chops

Spicy Garlic-Spinach Sauté

Ingredients

  • 3 (6-oz) bone-in pork chops
  • ½ tsp gluten-free Creole seasoning
  • 1 Tbsp olive oil
  • ½ (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
  • 1 cup grape tomatoes
  • 1 clove garlic, minced
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Sprinkle pork with Creole seasoning and lightly with salt and pepper.
  2. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done; remove from skillet.
  3. Sauté onion mix, tomatoes, and garlic in same skillet 5 minutes or until tender. Return pork to skillet. Sprinkle with parsley.

Side Dish Ingredients

  • 2 Tbsp butter
  • 2 small cloves garlic, minced
  • 1 (10-oz) pkg baby spinach
  • 1½ tsp hot sauce

Side Dish Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add garlic; sauté 15 seconds, stirring constantly.
  2. Gradually add spinach; cook 2 minutes or just until wilted, tossing constantly. Sprinkle with hot sauce.
