Lemon-Caper Shrimp
Roasted Green Beans and CarrotsIngredients
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 2 lb peeled and deveined, large raw shrimp
- 3 Tbsp capers
- 3 Tbsp fresh lemon juice
Instructions
- Sauté garlic in hot oil in a large skillet 1 minute. Add shrimp, capers, and lemon juice; sauté 2 to 3 minutes per side or until shrimp turn pink.

- 2 (8-oz) pkg thin green beans
- 5 carrots, cut into matchsticks
- 3 Tbsp olive oil
- ½ tsp salt
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until vegetables are tender.
