Lemon-Caper Shrimp

Ingredients

  • 2 cloves garlic, minced 
  • 2 Tbsp olive oil
  • 2 lb peeled and deveined, large raw shrimp
  • 3 Tbsp capers
  • 3 Tbsp fresh lemon juice 

Instructions

  1. Sauté garlic in hot oil in a large skillet 1 minute. Add shrimp, capers, and lemon juice; sauté 2 to 3 minutes per side or until shrimp turn pink.

  • 2 (8-oz) pkg thin green beans
  • 5 carrots, cut into matchsticks
  • 3 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 15 to 20 minutes or until vegetables are tender.
